Characteristics :

It has dark blue color on its top and oblique stripes on its undersides. They are short-life species.

 
Habitat : Skipjack can be found in tropical oceans all over the world between 45°N and 40°S. They swim in the upper mixed layers of the oceans.
 
Harvest Areas : Thailand, Indonesia and Philippines
 
Confusing species : Similar to Yellow fin tuna, however, Albacore possess an elongated pectoral fin and a distinctive white rear border on the caudal fin, which is unique to this species.
 
Product Characteristics : The meat of the Skipjack has a somewhat darker of color sometimes even slightly pinkish. It has a relatively tender texture, and is has somewhat more a fishy taste then some other tuna species. The small size of the fish gives small loins and chunks. Making it excellent for canned tuna chunks.
 
Popular Production Form :

Skipjack tunas are mainly caught from the Pacific Ocean; Thailand, Philippines and Indonesia. Some are caught from the Atlantic Ocean; Ecuador, Colombia, Ivory Coast.

 
Preparation : Skipjack can be cooked in various dishes, especially poke, raw fish. Many Japanese and Hawaiian consumers prefer sashimi prepared from large skipjacks.
