Characteristics :

It has long saber-shaped pectoral fins, and a thin white stripe along its tail. Its top and sides are quite dark gray to steel-blue color but its underside is white to silver color.

 
Habitat : Albacore can be widely found in sub-tropical and temperate oceans ranging between 13-25 degrees. In the Pacific, a younger albacore will migrate between eastern and western shores. In North Pacific, each of them has different migration style. Spawning adults exceeding six years old make shorter journeys than their offspring. In summer and fall, their migration areas range from Lower California to British Columbia.
 
Harvest Areas : Albacore tunas are mainly caught from Pacific Ocean. They are 2 stocks, the northern stock is between 45˚N, from Japan to North America and the southern stock is between 15˚S and 40˚S, from Chile to New Zealand. The northern stock has higher catch than southern stock. Albacore tuna are also caught from Atlantic Ocean. They are 3 independent stocks; the northern stock is around Bay of Biscay, the southern stock is around West Africa and the Mediterranean. Some are caught from the Indian Ocean.
 
Confusing species : Similar to Yellow fin tuna, however, Albacore possess an elongated pectoral fin and a distinctive white rear border on the caudal fin, which is unique to this species.
 
Product Characteristics : Due to its white colored meat albacore is also called "the chicken of the sea". As canned product it is quite popular in the States, where it is marketed as "White Tuna". The meat has a somewhat dry of texture, and the taste comes close to the taste of chicken meat.
 
Popular Production Form : White color meat, as highest quality tuna for canning.
 
Preparation : Albacore is usually grilled because it dries out quite quickly. Avoid using high temperature cooking.
